The "KoA', Kitchen Open Air" restaurant is the first step in the development of the “Excellence centre for technological innovation and research”, called the Open Zone, in the municipality of Bresso in the Parco Nord Milano. The restaurant, a 30m square building of a single level overlooking the countryside, can host 220 guests. The shell of the north, east and west facades is constructed in high transparency cavity glass mounted on a system of thin steel frames which makes the frontage light and transparent and with a view over the park.
The kitchen block facade, which is south facing, is constructed, like the roof, with a double skin covered externally in opalescent white glass which conceals the kitchen from the outside while acting as a filter for the outside environment, accumulating heat in the winter and reflecting away direct sunlight during the summer. The interior of the building is divided into four separate areas. The dining and events room occupies half the surface of the entire building and is separated from the rest by transparent divider walls so that the café can be used throughout the day, independently of when the kitchen is open. It is followed by the technical block, the food preparation and storage block and the counter zone for food distribution, intended for continuous flow operations.
The facades of the dining room and café open onto terraces facing the park, furnished with outdoors tables. In the evening the opalescent facade and roof of the restaurant can be backlit by multicolour led strip lights, for a variable luminous effect. The finishings and furnishings of the dining room are done in specially selected materials: simple, eco-compatible and recyclable, like glass, steel, porcelain stoneware, with stools and chairs in natural wood. Special care has been paid to the flooring, which uses natural, hardwearing and easy to clean
Active Silver Ground antibacterial and anti-pollution slabs.
Thanks to the careful design of the layout of the individual slabs, the floor is sophisticated and never monotonous, and is suited for a variety of events and occasions.
